Tomato, feta and basil salad


This simple salad is one of our favorite salads. I must say that the boys particularly appreciate it. They feast each time because their greatest pleasure is to dip pieces of bread in the sauce. It is very easy and quick to prepare. That's why I share it today.
It will be better if you macerate a little. So the flavors can be spread in tomatoes. It is also very good the next day even if the tomatoes can be a little softer.
The choice of tomatoes is important. Choose preferably Heart of Beef tomatoes and real and organic or from small producers. Not those who have grown above ground and do not have much to do with the real ones. For more information, read our article. We must avoid keeping tomatoes in the fridge otherwise the aromas of tomatoes are destroyed by the cold
This salad can be served as an entrée. In this case, you need 400 g of tomatoes, 80 g of 100 g of feta, a handful of basil, 1/2 tablespoon of balsamic vinegar and a tablespoon of olives. The quantities I have indicated in the recipe are for serving as a side dish with grilled meat or vegetarian dishes.

ingredients

800 g beef tomatoes preferably
200 g of feta
2 large handfuls of basil
2 tbsp. soup or balsamic vinegar
3 tbsp. soup or olive oil

Instructions

Wash tomatoes and basil leaves. Wipe them with a clean cloth.
Cut the tomatoes in 2 and remove the peduncle then cut into quarters not too thick. Put them in the serving bowl.
Emit the feta cheese and add it to the tomatoes.
Keep a small bunch of basil for decoration and then chop the rest. Add to the other ingredients.

Pour the olive oil and the balsamic vinegar and mix. Cover and let macerate for at least 1/2 hour. Do not refrigerate as tomatoes lose their flavor.
