Carrot salad with pistachios it is a good source of fiber and protein.


This salad of carrots is rich in vitamins, minerals, antioxidants that will help you withstand the aggressions of winter. In addition, it is a good source of fiber and protein.
                    
You can prepare it with grated carrots ready for use. Five minutes will be enough in this case but it will be less good because the grated carrots put in vacuum bag are drier. Not to mention the loss of vitamins due to the oxidation of the air even if they are surrounded by a gas intended to prevent it.

It can be prepared in advance and can be stored for 1 to 2 days in the refrigerator but remember to cover it with a lid or a cellophane film. The faster it is eaten richer it will be in nutritional values.

ingredients

400 g carrots or 2 bags of 200 g ready-to-use shredded carrots
3 tbsp. tablespoons or unsalted pistachios or 30 g
2 tbsp. tablespoons or tablespoons of sesame kernels
Orange vinaigrette
4 tbsp. soup or table or 60 ml or ¼ cup orange juice
2 tbsp. tablespoons or tablespoons grilled sesame oil
1 tbsp. tablespoons or cider vinegar
| ½ cuil. tablespoon or honey mustard or maple mustard

Instructions

In a small bowl, mix the mustard with the orange juice and vinegar, add the oil and mix.
Put the pistachios in a fairly strong plastic bag and crush them roughly with a rolling pin.
Wash, peel and grate the carrots. Put them in a bowl.

Pour the vinaigrette, pistachios and sesame seeds and mix.
