This soup is an
anti-waste soup because carrots are used. It is cooked in a pressure cooker.
But, if you do not have one, no problem. You can cook it in a large saucepan.

Cancoillotte is a
cheese from Franche Comté. It is a broken white cheese, a rather compact paste
rather elastic when it is cold. It becomes flowing when heated. It is sold in a
pot and can be kept for several weeks. it is found natural or flavored most
often with garlic but also with white wine, nuts ... The advantages of this
cheese is that it is low in fat and rich in protein. It is often used in
Franche Comté cold on toast. But, personally, I replace the Reblochon and put
it on potatoes to make lighter tartiflettes. I also make cheese fondues where
you dip pieces of bread with small raw or cooked vegetables
I put soy but, you
can replace it with fresh cream.
ingredients
875 ml or
3.5 cups of vegetable broth reduced in salt or the same amount of water and 1.5
tsp. soup or vegetable broth reduced in salt, 1 cube ½
400 g
carrots or about 3 large
250 g of
potato is a large mashed potato
1 big bunch
of carrot tops (120 g)
1 sweet
onion, preferably like Roscoff onion of about 100 g
100 g
cancoillotte with garlic
1 tbsp.
tablespoons or canola oil or canola
4 half
teaspoons of soy cooking
some sprigs
of carrot leaves for decoration (optional)
method of
preparation
Wash the
vegetables.
Peel the
carrots and the potato
In the tank
of a pressure cooker, heat the oil over medium heat.
Peel the
onion and cut into strips.
Fry the
onion for 1 to 2 minutes and add the carrot tops for 1 to 2 minutes. Keep a few
sprigs of carrot tops for decoration (optional).
Meanwhile,
cut the carrots 3 to 4 cm long and the potato into cubes of the same size.
Add the
vegetable broth, the cut vegetables. Close the casserole and cook for 10
minutes from the pressure rise.
Open the
casserole according to the safety instructions, add the cancoillotte and mix
with a mixer.
Pour into
bowls or plates, put in the center of each a 1/2 teaspoon of cooking soy,
decorate with a few sprigs of carrot tops and accompany homemade croutons.
